Easter weekend is upon us. Hope you are finding small ways to celebrate in your homes. The weather is supposed to be nice this weekend, so I’m really excited about that. Outdoor time is truly life-giving in even greater ways than it used to be. The boys and I made these eggs last week with red cabbage and they’re the prettiest shade of blue ever. Instructions below.
Some weekend reading…
Five cups of chopped red cabbage, five cups of water. Boil it, then bring it to simmer for 25-30 minutes. Strain out the cabbage and put the eggs and the water into a bowl/jar with five tablespoons of vinegar. Leave it there for a few hours up to 24 hours for different shades of blue. Remove and admire your pretty eggs.

I saw this gorgeous plant at a nursery recently and immediately started thinking of where one could go in my house. Also, when asked, “easier or harder than a fiddle leaf fig” the woman told me easier. (The answer I was looking for.)
If I were getting another robe (I want to, but I have three that I rotate fairly regularly so, really, do I need another?), it might be this one. This is the one I wear most, and it is so wonderful.

I love the shoulders on this dress so much.
Things I made this week that were good: this double chocolate banana bread, chicken divan, and this veggie pasta (extra garlic, please; and don’t forget the fresh pecorino romano at the end).
Things I want to make next week and hope they will be good: cabbage and farro soup, chicken tortilla dump casserole, and this no knead bread.
Right by our kitchen sink and on overdrive lately because of all the hand-washing.
Does anyone out there have a weighted blanket? I tried one at my sister’s house and nearly fell asleep, it was so comforting. Any favorites?

Elephant Ears are very easy. A no-fuss plant. They seem to thrive in partial sun. They grow to be gigantic, though! Maybe if they are in a pot, they don’t try to grow out of it? I’ve only ever had them outdoors and they get huge. Lovely plant – it is easy to grow from the bulb, also.

Love that linen robe! I’ve been looking for one for nursing, and I never think to look at H&M.
We just got our second box from Misfits and I love it! I think their shipping has been a bit hit and miss due to Covid-19 but I’ve been really happy with the variety and quality of the fruit and vege. It’s definitely challenged us to be more creative and waste less.

i LOVE my weighted blanket. especially during summer months when i take off my heavy covers. it was a game changer for me last summer with my sleep. i drove all over pdx looking for yeast to make that bread. hoping to make several loaves to drop off for my undocumented student’s families. man, undocumented families have it hard during this time. they are so scared to get any type of services. even from a food pantry. any place where you have to give a name and address is considered a threat of deportation. as a teacher, i’m still getting paid and working from home. the extra time has me trying different recipes and indulging in baking. the difference between my experience and those dealing with food insecurities is vast. hoping i can still fill some time with baking that soothes my soul while helping others. especially my students. i miss them so.
one thing to be cautions about when getting imperfect produce delivery is sometimes that produce use to be taken to food banks before they started making a profit of it. i read an article about it once. not sure if that’s the case with this company.
