Listening to the Holiday Soundtrack currently but haven’t watched it (yet), whole chicken roasted in the Instant Pot for a future night (but tonight’s dinner was clementines), presents mostly bought (but not entirely bought, and not even a little bit wrapped), and the beat marches on.
What have you been up to? Are you staying warm? Are you listening to some new Christmas music I don’t know about yet? Have you made any great new recipes? Or tried any new cookbooks? Are you getting along with your spouse and your kids? Your Mom? Are you feeling stressed? Are you getting enough sleep? I want the answers to all of the above.
Here’s my answers: yes, staying warm. No complaints! Even shoveled my driveway today so I could actually drive up it (slight incline; no four-wheel drive. That is observation, not complaint. See this post.) There’s something lovely about snowstorms in December, and we’ve had… three now, I believe? Will we get a white Christmas? I hope so. New Christmas music… hmm. Not so much, but I do believe this is one of the best Christmas playlists around, and I’ve been listening to it for years (and yes, it’s my own). No, I haven’t made any great recipes lately, but I did break my own rules by buying a cookbook before looking through it with this one and I’m really excited to dig in. After watching her make a Thanksgiving meal in her apartment, I decided we’d be good friends if we lived near each other, and I’d like to support her (in book-purchasing form, that is). Yes, I’m getting along with my spouse and kids, and Mom (and Dad… why’d I leave the Dads out?). Some stress, yes some stress, and definitely not enough sleep. Never enough sleep despite my perpetual desire to be in bed by 10:30. In fact, listen to what loser parents Steve and I were the other day. We were out at a friend’s house on Friday night, after many late nights, and on Saturday morning we slept right past Parker’s basketball practice. Both of us. He cried. We felt terrible. Well done, Mom and Dad. Every day is new, luckily.

I made this the other day and it was delicious! I used thighs w skin and bone (later removed), and didn’t bother bringing the IP back to pressure after adding the last veggies. SO good!
