Anders and I earlier this week at the beach. Even in the winter, it’s beautiful. We just don’t last as long there. It’s Friday! Happy weekend, friends. What are you doing? We’re having friends over for dinner tomorrow night–major foodies–and I’m not sure what to make them. Something not totally intimidating to me but that has a wow factor… any suggestions?! Help!

I needed something framed recently, and decided to see if the local Hobby Lobby was significantly cheaper than Framebridge (whose price was $99). Almost the same! I was surprised, and went with Framebridge. They do a great job.

Swapping out a ton of the pasta for roasted vegetables in this baked ziti. I might make this. Trying to make lots more vegetables these days. I’d love to say, “everyone’s loving it!” but honestly, Parker and Anders complain a lot at the dinner table.
We’re in a sex recession. (Not that this is entirely a bad thing, but I would presume that one of the causes is cell phone addiction and that is, I’d say, a bad thing.)

Shrimp scampi! Surefire winner. Serve with lots of lemons wedges and parsley. Throw in some sauteed pancetta if you wanna upgrade it. Made it last night for Valentine’s dinner. Put butter on the kid’s pasta. Steamed or roasted veg. Done.

I have that compost bin and love the look of it, but I wish it was a little bigger and also one side of the handle tends to pop off (crappy screw comes loose on one side) so I always have to carry it from the bottom, lest I end up with food scraps all over the kitchen floor.

Spaghetti squash chicken pad thai!
I roast two spaghetti squash and cook a pound of chicken, then dice it up. Then I saute a million diced veggies until soft (whatever I have in my fridge- carrots, bell peppers, spinach, peas, broccoli, bok choy, etc.). Then I take the veggies out of the pan and heat 1 cup chicken broth, 1/2 cup peanut butter, 1/4 c rice wine vinegar, 1/3 cup soy sauce, and 1 chili pepper until combined. THEN I throw all the cooked veggies, the cooked chicken, and the roasted spaghetti squash back into the pan, toss it up in the sauce, and heat it all. SO GOOD and makes a ton- even my three year old likes it! OH- serve it with green onions, salted peanuts, cilantro, and lime wedges. Don’t forget the garnishes!
