re: the almond milk. yes! i haven't tried the pre-soak method, but that makes sense. i usually just blend the heckies out of it, and strain. what to do with the chaff? i stir it into oatmeal. however, no one will judge if you dump it. let me know how long the almond milk stays fresh (if you get that far). i found that the shelf life is short (and that keeping it in a smaller container helped fight off the spoilage). almonds, ftw!

Eugene is awesome becuase:
Nature is everywhere! We live in the beautiful Willamette Valley, I live across the street from a hidden park. A 10 minute walk away from a larger, more seculded park. A 10 minute bike ride from the Willamtte River.
You can walk, ride a bike, or take the bus pretty much everywhere in our town.
The campus for The University of Oregon is beautiful! But I may be biased. Also, we're kinda good at football.
We have the super awesome hippie festival called Oregon Country Fair every July. I always dress up like a fairy. Wings and all.
Organic, vegan, and gluten free food are easily found in just about every restaurant and grocery store.
Like our big sister city to the North we have tons of coffee and beers that are made locally.
If this town sounds like fun to your you're more than welcome to visit! Just bring a rain jacket!
