this place makes my heart hurt.
and i say that because it’s one of those places that you come across that’s so beautiful that the fact that it is existing and you haven’t yet visited it and may never do so makes your heart hurt. know what i mean? i came across it in a coastal living magazine while sitting waiting for a prenatal (there’s a lot of those). my jaw dropped. actually dropped. have you ever seen a place so magnificent in all your life?! i told steve we must go. i said, “look! the bed is right there! the ocean is right there! two chairs right there for coffee in the morning! the pool is right there!! we would fall in love again!” he was trying to take his morning flaxseed meal concoction so he wasn’t quite as enthused as i was as he choked it down, but mark my words… if we come into a lot of money, this place will be at the top of the list (or we will have to sell the children one by one until we get enough for at least a 7 night stay).

since we’re nearing the end of crock pot season (at least in this family), i thought i’d share one of our faves with you before it’s too late (this was even lindsey’s birthday dinner request–kid friendly!). also, it doesn’t need to be done in a crockpot so if you’re not thinking of dinner till 6 pm, you can still do it. score.
12 to 16 servings

(this recipe is sort of the “whatever you have, use” kind of recipe.
so if you don’t have some of the following, NO big deal)
2 lbs. ground beef (i always use 1)
2 cups diced onions
2 cans pinto beans
1 can kidney beans
1 can corn
1 can mexican style stewed tomatoes
1 can diced tomatoes
1 can diced green chilis
1 can black olives, sliced (i leave this out)
1 package taco seasoning mix (TJ’s sells it now… without MSG!)
1 pkg. ranch salad dressing mix (i get whole foods version, again… no MSG!)
corn chips, sour cream, grated cheese as you wish…
brown beef and onions in large skillet (or dutch oven). drain excess fat unless it’s a little grass-fed fat then it’s all gooooood. add beans, corn, tomatoes, chilis, olives, seasonings, and cook in slow cooker on low for 6 to 8 hours OR simmer over low heat for 1 hour in pot on stove.

(i always have black beans on hand more often than other beans so i will use them instead of other beans it calls for… and sometimes i have all those types of tomatoes, sometimes i don’t… it’s seriously forgiving. use what you have and it’ll still be good. and avoid the MSG-laden packaged-mixes. i am a MSG hater and think we all should be, yes? let’s keep our brain cells.)

the 80s on the jersey shore.
this was 1987. when my mom sent them around my first question was, “WHERE AM I?!” since i was three at the time, and nowhere to be found (though my mom is suspect that i’m one of the little ones on the dock) then who knows if i was busy climbing on the counters in the kitchen, playing with matches and knives while my parents listened to johnny cash and drank cocktails on the dock. nice one, mom and dad. but, even so, these videos are fun. skip ahead to 2:00 to see my gangly father sashay (because that’s all that it can be called) in with a cigar and then my mother at 3:00 put on a little dance.
